Chicken Salad With Red Cabbage

Chicken salad with red cabbage is a quick and easy lunch that can be prepared ahead of time and packed with you to work or school. The red cabbage adds a nice crunch to this chicken salad, in addition to vitamin C, iron, magnesium, vitamin B6 and calcium. Makes 2-4 servings. 

Ingredients:

2 cups cooked, diced chicken 

1/2 green apple, chopped

3 dill pickles, chopped

1/2 cup red cabbage, shredded 

2 tbsp mayonnaise 

1 tbsp Dijon mustard 

Directions:

Combine chicken, apple, dill pickles and red cabbage in a medium size bowl. Stir to combine. Add mayonnaise and Dijon mustard and stir until well blended with all of the other ingredients. Optional: serve with crusty bread topped with avocado, tomato slices and everything bagel seasoning. Smacznego!
